A LATE SUMMER TREAT
( For anyone who likes cake! )
APPLE CAKE
2 large eggs
3/4 cup vegetable oil
1cup sugar
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
teaspoon salt
1 teaspoon vanilla
4 cups thinly sliced apples, cut a little shorter than for pie
A mild summer variety of apple is ideal
Beat eggs, add oil and beat
Add vanilla
Mix together all the dry ingredients
Add to eggs and oil
This mixture will be very thick
Use a large spoon to stir in apples
Spoon into a large ungreased Angel Food pan
Bake in pre-heated oven at 350 degrees for at least 1 hour.
Mine took 10 min. longer
Let cool on rack for only a few minutes to prevent crust from sticking too tight to the pan. Use a knife to loosen cake around the tube and side of pan
Turn upside on rack
Use knife again to loosen cake from bottom
Let cool --- and yum, yum, yum! Goodie good!
You will love the chewy, scrunchy crust!

PLEASE NOTE ---
Today I baked this cake again, and had a harder time getting it out of the pan than I did the first time. I felt very puzzled about it. Even though the recipe says to use an ungreased pan, I've decided that the secret to getting it out easier is to grease the pan. Even though the batter already has oil in it, I believe it will come out just as crunchy and tasty. That is what I will do next time.
